    Ingredients Needed

Most of what you will need are pantry staples, aside from the fresh cranberries. For full ingredient amounts and directions, scroll to the printable recipe card at the bottom of this post.

    • Flour
    • Pumpkin Spice
    • Baking Soda
    • Baking Powder
    • Salt
    • Pumpkin: I use a 15 ozcan of pumpkin. Make sure it is purepumpkin puree, not pumpkin pie filling which is already sweetened.
    • Sugar: I use a combination of brown sugar and granulated sugar.
    • Eggs
    • Buttermilk: If you do not have buttermilk, you can whisk 1 tablespoon white vinegar into 1/2 cup whole milk and let it sit for 5 minutes.
    • Vanilla Extract
    • Cranberries: I like to use fresh cranberries, but frozen cranberries will also work!

    Tips and Variations

Guarantee this bread turns out just the way you want with these recipe tips and variations:

    • Don’t Over-Mix: Stir the batter just until there are no big lumps and then pour into loaf pan. If you stir too much, you can make your bread tough.
    • Parchment Paper:Greasing the loaf pan and then lining it with parchment paper will help the bread not stick to the pan. It also makes it easy to lift the pumpkin cranberry bread out of the pan.
    • Add Nuts: You can add 1/2 cup of any chopped nuts you enjoy, I recommend walnuts or pecans. You can also sprinkle pepita seeds on top of the batter.
    • Homemade Pumpkin Spice: If you are out of pumpkin spice, make your own by combining 4 tsp cinnamon, 2 tsp ginger, 1 tsp cloves, 1/2 tsp nutmeg and 1/2 tsp allspice.
    • Use Real Pumpkin: If you want to use homemade pumpkin puree, make sure to strain it through a cheesecloth to remove excess liquid and make it the same texture as store-bought canned pumpkin.
    • Muffins: Want to use this recipe to make cranberry pumpkin muffins? Bake them at 350°F in a standard sized muffin tin for about 18 to 20 minutes.

How To Store Cranberry Pumpkin Bread

To store, tightly wrap the completely cooled pumpkin cranberry bread in saran wrap or foil. Store the bread on your counter for about 4 days, or in the fridge for up to a week.

To warm, you can lightly toast a slice in your toaster oven or a standard toaster. You can also microwave it for 10 seconds for that freshly baked taste.

Freeze an entire loaf, or individual slices, for up to 3 months. Allow bread to cool completely, then wrap the entire loaf, or single slices of pumpkin bread, tightly in Saran Wrap. Place the wrapped bread in a freezer friendly ziplock bag and freeze for up to 3 months. For best results, allow bread to thaw in the fridge for 24 hours before serving.

    FAQs

Why is my pumpkin bread not moist? ›

Try cutting the amount of flour, or adding more milk. It's also possible your oven was too hot, or you baked the pumpkin bread for too long. Try reducing the oven temperature and cutting the baking time.

Why is my pumpkin bread so dense? ›

Pumpkin bread can become dense if there is not enough hydration or wet ingredients in the recipe. Another cause is overcooking the bread which can cause it to dry out. Remember, it's always easy to keep cooking if it isn't done but impossible to take cooking time back.

How long does homemade pumpkin bread last? ›

HOW DO I STORE PUMPKIN BREAD AND FOR HOW LONG? Place in an airtight container or resealable plastic bag for up to 4 days. To freeze, wrap in heavy-duty foil or plastic wrap and then place in a tightly sealed container or heavy-duty resealable freezer bag. Freeze for up to 2 months.

Why is pumpkin bread good for you? ›

My recipe has only 103 calories and 19 grams of carbohydrates per slice. Plus, each serving contains a little protein and fiber. Pumpkin is an excellent source of vitamins A and C, and since it's low in calories, it gives the bread moisture without adding saturated fat. Of course, all things in moderation.

How can I make my bread more moist? ›

Some alternative ingredients can help give your bread added moisture. One such ingredient is milk, which has a high-fat content and can add a delightfully creamy flavor when baking. Additionally, adding mashed potatoes or cooked grains can help keep the crumb soft and tender for days after baking.

Why won t my pumpkin bread cook in the middle? ›

Setting the Oven Temperature Is Too Hot

If your oven runs hot, your bread is likely to brown and bake up on the outside before the center has a chance to fully cook. Invest in a simple oven thermometer to help verify the temperature. Make sure you have other bread baking essentials in your kitchen, too.

How can I make my bread lighter and fluffy? ›

    Potato Flakes or Potato Water

Starch helps the dough by trapping the gas from the yeast in the dough and makes the bubbles stronger. This helps the bread to rise and be lighter and fluffier.

What happens if you use too much baking soda in pumpkin bread? ›

Bitter Taste: Excessive baking soda can leave a bitter taste in the bread. Baking soda is alkaline, and an excessive amount of it can result in an unpleasant flavor. Unpleasant Texture: Too much baking soda can lead to a coarse and crumbly texture in the bread.

How do you know when pumpkin bread is done? ›

So, to know when pumpkin bread is done, look for the crack on the top of the bread, which is a tell-tale sign it's either done or close to being done. Then stick a skewer or toothpick into the center of the bread. If it comes out clean, it's ready to come out of the oven.

Should you keep pumpkin bread in the refrigerator? ›

Should Pumpkin Bread be Refrigerated? Pumpkin bread stores fabulously well at room temperature due to the pumpkin and oil. It does not need to be refrigerated unless you want to make it last an entire week.

Can I let pumpkin bread cool overnight? ›

Yes, in fact you should leave it out to cool at least 6 hours. Once it is cooled you can keep it fresh best by putting it in a paper bag.

Can you eat pumpkin everyday? ›

It is safe and healthy to eat pumpkin every day, but Campbell suggests sticking to only one serving per day—about half a cup of canned pumpkin and one cup of raw pumpkin – for a couple reasons. “Although pumpkins are great for you, they do contain a good amount of fiber,” says Menshulam.

Is pumpkin bread high in carbs? ›

Whole Foods Pumpkin Bread (1 serving) contains 28g total carbs, 27g net carbs, 11g fat, 3g protein, and 220 calories.

Why is pumpkin so healthy? ›

“Because they're rich in vitamin A, pumpkins also lower your risk for certain types of cancer, including prostate and lung cancer.” Additionally, pumpkins contain carotenoids, a pigment that functions as an antioxidant. Carotenoids may lower your risk of developing throat, pancreatic, stomach and breast cancer.

How do you fix dry pumpkin bread? ›

Dry bread: Dry pumpkin bread is such a disappointment. To avoid dry, crumbly bread, try to keep your batter moist. Either do this by using less flour or adding more liquid — but don't add more oil. Instead, try adding orange juice or even bourbon to get some liquid into the batter.

Why is my bread always so dry? ›

Your Bread Has Too Much Flour

Adding too much flour is one common mistake for beginning bakers. This produces dry bread with more crumbs. The key is to find a balance between the flour and liquid ingredients in your recipe. It can be tricky because bread recipes don't always give you an exact amount of flour.

Why is my bread not soft and fluffy? ›

Overworking the dough can cause the gluten strands to break down, resulting in a tough and dense bread. To ensure a light and fluffy texture, knead the dough just until it becomes smooth and elastic. This usually takes about 7-10 minutes by hand or 5 minutes in a stand mixer.
