Georgia

Mae this without yogurt or cheese (vegan), and it was delicious. I chopped apples and celery and used box grater for other veggies. Consistency was fine.

Barbara

This is wonderful, even with a sweeter in-season apple! Made with sour cream instead of yogurt because that was on hand, even my daughters-who-hate-cabbage ate it.

Lauren

I made it without radishes or celery and I love it. The only problem is I made a lot (we had the cabbage!) and the apples don't last like the rest. They are getting mushy after 2 days. I think next time if I make a lot I will add the apples as we go.

M

a bit wet, could add ginger, maybe chiles

SY

I regularly make a simple winter salad… grated apple and carrots, a handful of raisins or dry cranberries, juice of an orange. This was a great change of pace, a nice winter slaw, savory with a hint of sweetness from the apple , and helps put a dent in my CSA cabbages.

Lynn

Made with small half- head of red cabbage. Dressing is delicious. Would be good w walnuts

Annie

Made without the yogurt, it was delicious. I think it could benefit from the additional of fresh shredded ginger to kick up the flavor profile a bit more.

Deborah

I used Pineapple vinegar and no dairy for this batch and since I had no radishes I use a small amount of sweet onion; mandolin all the way; very good

Lauren

I made this yesterday with awesome local Cortlands, plus green cabbage and radishes that came in the CSA share and we needed to do something with! Skipped celery (I despise it) and had no carrots, but this slaw was delicious!!! I think I'd use a bit less mustard next time. Will make it again soon to use the other half of the cabbage (I doubled it).

Norma

I loved this cole slaw. There is more than an ample amount of dressing for the slaw; add it as you toss the slaw (along with the salt here--not in the dressing). Don't shred the radishes (there's very little space between your fingers and the box cutter); it's much nicer to slice them paper thin (half or quarter them first if they're large--that makes for a notable little crunch, and it's prettier. I skipped the feta (which I love) because it was for some guests who are lactose intolerant.

Sarah

I made this with a bunch of substitutions, and I figured I'd share for folks that are improvising lately:Lime juice instead of lemonNo applesA splash of heavy cream instead of yogurtButter lettuce instead of cabbageeStill super tasty for burger night :)

Tasty! The yogurt helps but it's good without it as well. We used lime juice since that's what we had, and a little less dijon, and it was delicious. We have gotten more cabbage in our farm share (CSA) this year than we really had an appetite for, so this was great.

Bil

Had everything but radishes. I drizzled the dressing little by little, mixing between each drizzle. Almost forgot the feta, which I think adds the creamy, salty flavour. Very good recipe. I'll make this again. Thanks!

Sue

Very good. A little wet. I used Greek yogurt thinned with a little milk but next time I won't thin it.

Simone

Substituted an extra carrot for the celery and radish, but didn’t have the same punch. Used two Macintosh apples and a bit too sweet. Would add more vinegar and mustard next time.

mary

I just put this together and it's delicious. I shredded all the veg in the food processor so it went really fast. I did hold back the top ends of the celery and hand chopped them for contrast. I did not add the yogurt and did add 1/8 t. of red pepper flakes. It is really tasty..I definitely will make this again.

Michelle

The variety of vegetables made this slaw different and interesting, but I found the dressing a little boring. It was a little runny and just needed something - more acid? Herbs? I would definitely not say it stood out as an overly "pungent" slaw.

Park Slope Kathy

This is excellent! Dressing is really delicious. I did add a little finely chopped red onion. Here's a tip: Use your 'mini' food processor! I hand chopped the celery into tiny cubes but used the mini prep for everything else. Worked great - chop the veg/apples into cubes about 1" - put about 1 cup at a time into the mini prep - and pulse a few times. You get a nice fine chop - great texture for a slaw!
